I'm a fan (and you should be too) because...my girlfriend at the time brought home Little Earthquakes. Some of the songs so reminded me of Kate Bush whose music I love. Good music and interesting lyrics. I have to admit I didn't like the album art or the more "hippy" appearance that Tori had back then but then who am I to be a critic. Not everyone likes the same stuff.
I lost interest when Tori released Pele, I can't say I like a song on it but then came Choirgirl Hotel, now that is my kind of new music. Tori continues to change and I really like that. Tori is probably the reason I then went on to like bands like Evanescence, Lacuna Coil, Within Temptation and on the other side, Sarah Brightman. All very different from Tori but amazing just the same.
Her music also inspired me to find a female vocalist for my band Anti-M. We even had a song on our latest album titled "channeling tori amos" but the title was too long for the album sleeve so we changed the name to "deep" and only used the "channeling" idea for the download version on itunes.

I hope Tori continues to put out great music as she had, and I hope some day she releases Y Kant Tori Read which is actually quite good.
